Firstly, thanks for taking the time to come and learn more about Sticky Balsamic Pearls, the new molecular gastronomy sensation! Sticky Balsamic crafts Australia’s most awarded balsamic varieties!
Now… I hear you asking, what are Sticky Balsamic Pearls? Let’s get right in to it. Sticky Balsamic Pearls have a tart liquid balsamic centre, made from our multi-medal winning balsamic range, with a casing around the outside which is based on seaweed. This means that you experience a delightful “pop” when eating them, along with a spectacular taste.
We have made them in six of your favourite Sticky Balsamic varieties (click the specific varieties below to go to the product page for more information):

Sticky Balsamic Lemon Pearls
- use with seafood, salads, fruit, drinks, porridge with stewed rhubarb, ice cream, avocado, asparagus risotto

Sticky Balsamic Original Pearls
- use with eggs for breakfast, cheese plates, red meats, salads, fruit, mocktails (or your choice of drink!), platters, risotto, pasta, oysters

Sticky Balsamic Premium Fig Pearls
- use with salads, ice cream & berries, red meat (especially lamb), mocktails (or your choice of drink), cheese and charcuterie plates

- use with chia for breakfast, prawns and seafood, mocktails (or your choice of drink), with fruit salads, eggs and avocado for breakfast, pasta with seafood, oysters

Sticky Balsamic Premium Truffle Pearls
- use with pork belly, anything with blue cheese (cheese plates, charcuterie plates, salads, pizza’s), salads, mushrooms and eggs for breakfast, pretty much anything that you feel needs that incredible truffle flavour!
As you can see, the uses are endless!
We tend to use Sticky Balsamic Pearls as a garnish with many foods (and you’ll see some pictures on this page showing a few ideas), and what we particularly love is that you never know just quite how many you are having, and so the tart pops of flavour are different each time. This means that sometimes you will have more of a flavour burst, and other times it will not be as strong. But do bear in mind, these pearls, although they are small, really do pack a tart flavour punch!

We make them in small batches and so each batch is different. They may be larger or smaller than the photos but they will still be delicious! They also will be covered in liquid which you can use too!
