We all loved this meal, including the kids - it's so much fun to eat, as well as being easy and healthy! You'll need a spiralizer to create the long strands of zucchini.
Serves 6
Ingredients:
6 medium zucchini
1.5 tbsp minced garlic or 4 cloves finely chopped
1 cup finely grated parmesan cheese
1.5 tsp cornstarch
4 tbsp Extra Virgin Olive Oil
1/2 teaspoon chilli flakes (more if you want more heat or leave out if you want no heat)
3-4 medium tomatoes, chopped
Basil leaves
Salt & Pepper to taste
Sticky Balsamic Pearls (we used Lemon Pearls)
Method:
1. Wash, trim and spiralize the zucchini. If you want, you can cut the zucchini strands (our kids love the fun aspect of long noodles)
2. Heat the oil in a large, flat bottomed pan. Add the chilli (if using), garlic and cook for a minute. Then add the zoodles.
3. Mix until the zoodles are al dente, keeping them moving all the time so they cook evenly.
4. Add basil, tomatoes, parmesan and cook for one minute.
5. Transfer to a serving dish and leave the liquid simmering in the pan.
6. Mix the cornstarch with 2 tsp cold water in a small bowl and add to the liquid in the pan. Season to your liking and pour over the zoodles in the serving dish.
7. Garnish with basil, parmesan and Sticky Balsamic Pearls.
Serve immediately and see everyone adore your new, simple, delicious meal!
If you have leftovers, keep in and airtight container in the fridge and enjoy over the next couple of days. Don't be surprised if more liquid comes out as zucchini contains a lot of water.
