Zucchini Noodles with Parmesan and Basil

This fun and healthy zucchini noodle dish is a hit with kids and adults alike! Tossed with garlic, tomatoes, and parmesan, it's a delightful meal that's quick to prepare and bursting with flavor.

Ingredients
6 medium zucchini, spiralized
1.5 tbsp minced garlic
1 cup finely grated parmesan cheese
1.5 tsp cornstarch
4 tbsp Extra Virgin Olive Oil
1/2 teaspoon chilli flakes, (more if you want more heat or leave out if you want no heat)
3-4 medium tomatoes, chopped
Basil leaves
Salt & Pepper, to taste
Sticky Balsamic Pearls, (we used Lemon Pearls)
Directions
Wash, trim and spiralize the zucchini. If you want, you can cut the zucchini strands.
Heat the oil in a large, flat bottomed pan. Add the chilli (if using), garlic and cook for a minute. Then add the zoodles.
Mix until the zoodles are al dente, keeping them moving all the time so they cook evenly.
Add basil, tomatoes, parmesan and cook for one minute.
Transfer to a serving dish and leave the liquid simmering in the pan.
Mix the cornstarch with 2 tsp cold water in a small bowl and add to the liquid in the pan. Season to your liking and pour over the zoodles in the serving dish.
Garnish with basil, parmesan and Sticky Balsamic Pearls. Serve immediately.
