Zucchini Wedges

Zucchini Wedges

These were SOOOO good I had the whole lot for dinner when I made these!

Make as many as you want! You will keep coming back for more... They were so simple to make and perfect with fresh seasonal veggies. Have this for a snack, as a main meal or to accompany your meal.

Zucchini (as many as you like!)
Finely grated parmesan cheese
Breadcrumbs (we used panko)
Salt & Pepper
Sticky Balsamic Extra Virgin Olive Oil
Your favourite Sticky Balsamic (We used Pear for this)

1. Put your oven on to a hot setting (we set it at 240 celcius).
2. Cut your zucchini longways to create wedges and set it down onto some baking paper.
3. Drizzle Sticky Balsamic Extra Virgin Olive Oil over the zucchini.
4. Add salt & pepper to your taste.
5. Sprinkle over grated parmesan and breadcrumbs.
6. Place in the oven and bake for around 12 minutes, so that the zucchini still has a bit of firmness.
7. Plate up and drizzle with Sticky Balsamic Pear or your favourite variety.

Eat, and if you need to, protect from everybody else as it is simply DELICIOUS!
