Zucchini Noodles

Zucchini Noodles

Fancy a delicious, healthy dinner that is quick and so easy to make? You probably have everything at home already!

Serves 4

20 minutes to make

Ingredients:

4 medium zucchini
3 tbsp extra virgin olive oil
2 medium tomatoes (or canned tomatoes, just don't use the juice)
1 cup basil leaves
1/3 tsp red pepper flakes, more if you like it spicy
1 tbsp finely chopped garlic
1 tsp cornstarch
2 tsp cold water
Salt & Pepper (to taste)
Sticky Balsamic Pearls (we love this with Original, Fig, Truffle or Lemon Pearls)

Method:

1. Wash and spiralise the zucchinis and then cut if you feel the length is too long.
2. In a heavy bottomed pan, fry the garlic, pepper with the olive oil until the oil bubbles around the garlic.
3. Add the zucchini noodles and toss until cooked to your taste. Keep a bit of a crunch! Takes about 5 minutes. *Note: if you cook the zucchini too long it will go mushy.
4. Add the tomatoes, some of the basil and parmesan.
5. Cook for one minute and transfer the noodles to a bowl
6. Mix the cornstarch and water together, and add to the pan. Whisk until the sauce thickens.
7. Add salt & pepper to the sauce to taste.
8. Pour the sauce over the zucchini. 
9. Garnish with Sticky Balsamic Pearls, parmesan, and basil.

You can always do half zucchini spaghetti and half normal spaghetti if you like.
