Tahini Chicken with Sticky Balsamic Lemon Pearls

Tahini Chicken with Sticky Balsamic Lemon Pearls

Tahini chicken with garlic rice is so easy and quick to make, and tastes great! You'll love this fast recipe - it takes around 30 minutes and you should have most of it in your pantry already.

If you're not a fan of garlic rice, just leave out the garlic.

Number of Servings - how many people you have! It's easy to scale up or down.

1/2 cup basmati rice per person
1.5x chicken stock per person. So for 1/2 cup of rice, have 3/4 cup of stock (for 2 cups of rice, have 3 cups of stock etc.)
1-1.5 pieces chicken thigh per person
1/2 garlic clover per person, finely chopped
10g butter per person
Salt & Pepper
1/2 tbsp light soy sauce per person
1/2 tbsp honey per person
1/2 tbsp water per person
20g tahini per person
1 small tomato per person, chopped
1/4 chopped cucumber per person, chopped
Parsley, chopped
Spring onion, chopped
Sticky Balsamic Extra Virgin Olive Oil
Sticky Balsamic Lemon Pearls
Sticky Balsamic White

1. In a pan, heat the butter and cook the garlic until fragrant (1-2 minutes). Add the rice and stock. Bring to the boil with the lid on and then simmer for 12 minutes. After 12 minutes, take off the heat, fluff the rice and replace the lid for another 12 minutes for it to steam.

2. While the rice is cooking, season both sides of the chicken with salt and pepper and place on a hot, pre-heated griddle. Sear both sides and transfer to a flat-bottomed heated pan where you will complete cooking the chicken.

3. While the chicken and rice are cooking, prepare the salad. Add the tomato, cucumber, spring onion and parsley into a bowl. Add some salt & pepper to taste, and a dash of olive oil with a drizzle of Sticky Balsamic White (the White gives it a beautiful tart flavour experience).

4. In a separate bowl, add the tahini, light soy sauce, honey, and water. Mix, and set aside.

5. Once the chicken is cooked through, drizzle the tahini dressing over the chicken in the pan and cook for a minute or so - it may seem like a lot of dressing... we like a lot of dressing so it goes over the rice as well. You may like to make more if you are like us!

6. Once the rice, chicken and salad are ready, plate up and add some Sticky Balsamic Lemon Pearls. Just delicious!
