Roast Pumpkin & Sticky Balsamic Garlic
Here's a delicious way to eat your pumpkin, enjoying the limited edition Sticky Balsamic Garlic with it. This roast pumpkin salad is perfect to eat as a side to almost any main, or you can gorge on it as it is a delicious meal in itself!
INGREDIENTS:
1/4 Kent pumpkin (or your favourite variety)
Feta
Pine nuts
Rocket (arugula)
Salt & Pepper
Extra Virgin Olive Oil
Sticky Balsamic Garlic - Limited Edition
METHOD:
1. Drizzle some olive oil over the prepared pumpkin, and season with some freshly ground salt & pepper.
2. Place in pre-heated oven (180 degrees) for 25 minutes or until roasted to your liking.
3. While the pumpkin is roasting, toast some pine nuts in a dry pan.
4. When the pumpkin has roasted to your liking, remove from oven and allow to cool (if you wish).
5. Dress with some fresh rocket, crumbled feta, salt & pepper to taste, the toasted pine nuts and drizzle over some Sticky Balsamic Garlic.
6. Devour by yourself, or with friends 👍
