Here’s another dish of deliciousness by The Savvy Dietitian. This is her marinated vegetable pasta dish which is to be tasted to be believed!
Ingredients
2 1/2 cups spiral pasta, cooked
2 capsicum (red/yellow/green), diced 1 red onion, diced into wedges
1/2 eggplant, diced
1 zucchini, diced
3 garlic gloves, sliced
2 tablespoons Grove Avocado Oil
Salt and pepper to taste
Dressing Ingredients:
1/3 cup lemon juice
2 tablespoons extra virgin Grove Avocado Oil
1 tsp sugar (whichever you prefer)
Salt and pepper to taste
1/4 tsp each dried basil, parsley, oregano and chilli flakes
Method
1. Preheat oven to 180°C
2. Mix the dressing ingredients together and set aside
3. In a medium sized bowl, toss together the capsicums, eggplant, zucchini, red onion, garlic, avocado oil and salt and pepper. Transfer to a baking sheet and roast for approximately 25 mins.
4. Once the veggies are roasted, transfer into a large bowl and pour dressing over the veggies, allow to marinate for 30 mins. Cook the pasta whilst the vegetables are marinating
5. Mix the cooled pasta with the marinated veggies. Add feta cheese and serve! I also added my favourite Sticky Balsamic glaze to finish! * we think that Sticky Balsamic Orange, Apple, Premium Raspberry would work really well with this, or try your favourite *
