We went fishing recently and were lucky enough to have a friendly cormorant say hi (and see if they could beg some fresh fish!). We also saw jellyfish, yachts, big ships, ferries and also a pod of friendly dolphins! All in the bay!
We caught a 50cm flathead (which is HUGE for the bay) and decided to have what we caught for dinner!
Here's the recipe... 😊
Makes enough for 4:
Ingredients:
2 flathead per person, filleted and bones removed
Plain flour
Butter, to fry in
Flour
Salt & Pepper
Lettuce & rocket (arugula), torn
Tomatoes
Red Onion, chopped
Blood Plum, chopped
Cucumber, chopped
Method:
Combine the tomato. lettuce, cucumber, blood plum. Add salt & pepper to taste. Drizzle some Sticky Balsamic White over and mix.
Coat the cleaned and de-boned flathead fillets with plain flour, salt & pepper. Cook to your liking in butter and place on top of the salad. Dress with Sticky Balsamic Premium Pomegranate.
Enjoy!
