This quick, delicious pumpkin pasta recipe will fast become a staple in your household. It's also easy to make vegan as well by eliminating the cheese! Our kids keep on asking for it for dinner...
INGREDIENTS:

500g pumpkin

1/2 cup stock

1 onion, chopped

1 garlic clove, finely chopped

Spinach
-
2 tbsp Nutritious yeast
-
Ground cloves
-
Salt & pepper
-
4 Sage leaves
-
Pepitas
-
Walnuts
-
Parmesan (optional)
-
Olive oil
-
Wholemeal pasta
METHOD:
1. Prepare pumpkin and chop into approximately 2cm cubes. Add olive oil, salt, pepper, a pinch of cloves and roast until nearly done.
2. Cook your pasta and time it so that it is ready once the pumpkin mix is.
3. When pumpkin is nearly ready, add chopped onion and garlic, mix and return to oven for approximately 10 minutes.
4. Add pumpkin and onion mix to mixer, with the nutritious yeast, stock, sage leaves and some more salt & pepper to taste. Blend to your liking. Chop the spinach.
5. Add the pumpkin mix to the pasta and stir well.
7. Plate up, shave some parmesan if using, add spinach, seeds and nuts, and top with some Sticky Balsamic Original Pearls.
8. Devour with delight!
