Bruschetta Bowl by Feed Me Kate

Kate of @feedmekate has created a beautiful, quick bruschetta bowl - it takes less than 5 minutes to make and is so delicious!

She also made another variation of this by adding cooked barley and feta!!! They both obviously tasted similar but the added barley and feta made it more filling and gave it an another texture and layer of flavour and chewiness 🍅 so good 😊

400g medley tomatoes, halved
1/2 red onion, very thinly sliced
Handful fresh herbs, roughly chopped
1 1/2 cups croutons (I used sourdough)
1/2 green chilli, deseeded and thinly sliced (gives a nice little kick)
Sea salt and cracked black pepper
2 tablespoons olive oil
1 tablespoon Sticky Balsamic White
Sticky Balsamic Pearls, add to taste

Combine tomatoes, onion, croutons, herbs and sea salt and pepper in a bowl, toss to combine.
Whisk olive oil and Sticky Balsamic White until combined. Pour over the salad and toss to combine. Top with as many Sticky Balsamic Pearls as you wish. Serve and enjoy.

If desired, add 1/2 cup cooked barley and some crumbled feta!!
