Beetroot and Feta Salad

INGREDIENTS:

  • 4 whole beetroots, trimmed, peeled and halved

  • 2 tbs Sticky Balsamic Premium Raspberry

  • 2 tbs Extra Virgin Olive Oil

  • Salt and freshly ground pepper

  • 4 cups baby rocket

  • 2 cups cooked French puy lentils

  • 1 cup cooked chickpeas

  • 100g goat feta

  • 1/2 red onion, finely sliced

DRESSING:

METHOD:

1. Preheat oven to 150 degrees.

2. In a bowl, combine Sticky Balsamic Premium Raspberry, olive oil, salt and pepper to make a marinade. Add beetroots to bowl and tumble together to coat.

3. Line baking tray with foil, tip in beetroots and top with remaining marinade. Bake for 1 hour, or until tender. Set aside to cool.

4. To make salad dressing, whisk together ingredients and season to taste. Reserve half of the dressing, and pour the other half over lentils and stir to combine.

5. For the salad, add rocket leaves to a bowl, top with dressed lentils, then add chickpeas, feta and onion. Top with sticky glazed beetroots and drizzle with remaining dressing. Enjoy!
