Ingredients

For the Salad:

1 cup (200g) orzo pasta, uncooked

1 lb (450g) large shrimp, peeled and deveined

2 cups (300g) watermelon, cut into bite-sized pieces

½ cup (75g) feta cheese, crumbled

¼ cup fresh cilantro, roughly chopped (optional)

2 tablespoons olive oil

1 teaspoon Greek seasoning

Salt and pepper to taste

Instructions

Step 1: Cook the Orzo

Bring a large pot of salted water to a boil. Add the orzo and cook according to package directions until al dente. Drain well and set aside to cool slightly.

Step 2: Prepare the Shrimp

While the orzo cooks, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the shrimp with Greek seasoning, salt, and pepper. Add shrimp to the hot skillet and cook for 2-3 minutes per side until pink and cooked through. Remove from heat.

Cut the watermelon into bite-sized pieces, removing any seeds. Pat dry with paper towels to remove excess moisture.
