INGREDIENTS:
🥗 2 cups mixed salad greens (rocket, baby spinach, watercress)
🥗 ½ cup fresh lychees, halved (or tinned if you don't have access to fresh)
🥗 ½ cup sliced cucumber
🥗 ½ cup cherry tomatoes, halved
🥗 ¼ cup crumbled feta or goat cheese (leave out if dairy free)
🥗 2 tbsp toasted almonds or cashews (leave out if nut free)
🥗 2 tbsp Sticky Balsamic Lychee
🥗 1 tbsp olive oil
🥗 Pinch of salt and pepper
METHOD:
1. Arrange greens on a large platter
2. Add lychees, cucumber, tomatoes, and cheese.
3. Sprinkle nuts over the top.

5. Drizzle dressing over salad just before serving.
