Ingredients

250g sashimi‑grade tuna, diced into small cubes
1 ripe avocado, diced
1 tbsp soy sauce
1 tsp sesame oil
1 tsp lime juice
1 tsp finely grated ginger
1 tbsp finely chopped chives or spring onion
1 tbsp Sticky Balsamic Pearls (Original or Pomegranate)
1 tsp toasted sesame seeds
to serve microherbs
optional crispy wonton chips or toasted sourdough

Instructions

1. Prep the tuna:
Using a sharp knife, dice the sashimi‑grade tuna into small, even cubes. Keep chilled while preparing the remaining ingredients.

2. Mix the dressing:
In a small bowl, whisk together soy sauce, sesame oil, lime juice, and grated ginger until combined.

3.Combine ingredients: 
In a mixing bowl, gently fold the tuna, avocado, and chives together. Pour the dressing over the mixture and toss lightly to coat without mashing the avocado.

4. Plate the tartare:
Use a round mould or spoon to shape the tartare neatly onto a chilled plate. Smooth the top lightly for a clean presentation.

5. Add the finishing touches:
Sprinkle toasted sesame seeds over the top, then spoon Sticky Balsamic Pearls generously across the tartare for shine and flavour pops.

6. Serve:
Garnish with microherbs and serve immediately with crispy wonton chips or toasted sourdough.
