Monday Leftovers Glow-Up: What’s in the Fridge?

Mondays can feel like a reset… until you open the fridge and it’s full of “bits”: half a roast chicken, a container of veg, a lonely steak, a tub of rice, maybe some salad leaves that are almost past their best. Instead of starting the week with another boring reheat, give leftovers a glow-up.

  • Creamy: Greek yoghurt, labneh, mayo, hummus, avocado

Option 1: Leftover Roast Veg → “Not-a-Sad” Warm Salad

If you’ve got roasted pumpkin, sweet potato, carrots, cauliflower, Brussels sprouts, or anything tray-baked, this is the easiest Monday win.
