Grilled Peaches with Mascarpone & Balsamic Drizzle

Ingredients

  • 4 ripe but firm peaches, halved and pitted

  • 250g oz mascarpone cheese, room temperature

  • 2 tablespoons honey

  • 1 vanilla bean, scraped (or 1 tsp vanilla extract)

  • 2 punnets fresh raspberries

  • Sticky Balsamic Original

  • A tiny pinch of sea salt

  • Fresh mint leaves, for garnish (optional)

Directions

  1. Preheat the grill to medium-high heat.

  2. In a bowl, mix mascarpone, honey, vanilla, and a tiny pinch of salt. Whip until creamy and fluffy.

  3. Halve the peaches and remove the pits. Brush the cut sides with a little neutral oil and place them cut-side down on the grill.

  4. Grill the peaches for 4-5 minutes until grill marks appear.

  5. On serving plates, place the grilled peaches, add a dollop of mascarpone, scatter fresh raspberries, and drizzle with Sticky Balsamic. Garnish with mint leaves if desired.
