Ingredients: For the Rice Pudding:

  • 1 cup (200g) arborio rice
  • 4 cups (1L) whole milk
  • 1/2 cup (100g) caster sugar
  • 1 vanilla bean, split and scraped
  • 1/4 tsp salt
  • 2 egg yolks
  • 2 tbsp (30ml) heavy cream

For the Balsamic Poached Pears:

  • 4 firm pears, peeled and cored
  • 1/2 cup (125ml) Sticky Balsamic Premium Fig
  • 1/4 cup (50g) brown sugar
  • 1 cup (250ml) water
  • 1 cinnamon stick
  • 2 star anise

Method:

  1. For the poached pears, combine Sticky Balsamic Premium Fig, brown sugar, water, cinnamon, and star anise in a saucepan. Bring to a gentle simmer.
  2. Add pears and poach for 15-20 minutes until tender, turning occasionally. Set aside to cool in the syrup.
  3. For the rice pudding, combine rice, milk, sugar, vanilla, and salt in a heavy-bottomed saucepan. Simmer gently for 25-30 minutes, stirring frequently.
  4. Whisk egg yolks with cream, then temper with hot rice mixture. Return to pan and cook for 2-3 minutes until thickened.
  5. Serve warm rice pudding topped with sliced poached pears and a drizzle of the balsamic syrup.
