Enjoy a delightful breakfast or lunch with this easy-to-make avocado and eggs on toasted sourdough bread. Topped with creamy cheese and a drizzle of Sticky Balsamic, this dish is bursting with flavor and perfect for any time of day.

Ingredients
1 Sourdough bread, toasted to your liking
1 Avocado
1 Boursin cheese or other soft cheese, that can be spread
1 Soft boiled egg or Poached egg, to your liking
1 Parsley
1 Herbs
Salt & pepper
Sticky Balsamic, (We love Original, Lemon, Premium Reserve, Premium Truffle)
Directions
Toast Sourdough bread.
While toasting bread, soft boil an egg. Place eggs in a saucepan and cover generously with cold water; set over medium heat. Count 60 seconds once the water comes to a boil for a medium egg. For a runny yolk, add another 30 seconds. Once cooked, lift them out and place into a bowl of cold water to stop the cooking process. Peel the egg and use as soon as possible.
Cut avocado while toasting bread and cooking the egg.
Once toast is ready, spread cheese on the toast and place the avocado on top. Lightly toss over some parsley and drizzle your favourite Sticky Balsamic on top. Place the cut egg on top, add freshly ground salt, pepper, and herbs if desired.
