Egg, Tomato, Spinach, Mushroom Toastie

Inspired by @toastieee, here's an easy snack, breakfast, lunch or even dinner for you! Hopefully you have most of what you need in the pantry and fridge. This is for one person, so double or triple the recipe to your liking.

Ingredients:

2 slices of Sourdough bread, toasted
Handful of roma tomatoes, washed and halved
Handful of spinach leaves, washed
4 small mushrooms, sliced
1 Garlic clove, halved
1/2 a lime
1 Boiled egg
1 pinch chilli flakes (or more if you like it hot!)
Salt & Pepper
Olive Oil
Sticky Balsamic Pearls (I used Premium Fig)
Sticky Balsamic (I used Premium Fig)

Method:

1. Add some olive oil to a pan and fry the tomatoes until soft. Remove and set aside.
2. Put spinach in the same pan and allow to wilt. Remove and set aside.
3. Add mushrooms, chilli flakes and a squeeze of lime. Cook until ready and set aside.
4. Slice boiled egg.
5. Add a layer of tomato, spinach, mushroom, sliced egg.
6. Add salt and pepper to taste.
7. Garnish with Sticky Balsamic Pearls and Sticky Balsamic.
8. Devour!
