INGREDIENTS
3 medium sweet potatoes (kumara), cut into rounds.
Garlic infused extra virgin olive oil.
1/2 medium red onion, sliced into large pieces.
1/2 medium red capsicum, sliced into large pieces.
Salt and pepper. 400g tin brown lentils, drained. 120g spinach and rocket mix.
Feta.
Sticky Balsamic Orange
METHOD
1. Preheat oven to 180°C (fan forced).
2. Place the sweet potato, onion and red capsicum in a large baking tray, drizzle with garlic infused extra virgin olive oil and season with salt and pepper. Roast for 30 mins, turning occasionally until tender and golden brown.
3. In a large salad bowl mix the lentils, spinach and rocket mix, roasted capsicum and red onion together.
4. Then top with roasted sweet potato and mix gently.
5. Add crumbled feta and finish with a drizzle of Sticky Balsamic Orange.
