Roasted vegetable Ingredients
2 medium zucchini, diced
1 medium egg plant, diced
2 red capsicums, sliced
259g cherry tomatoes, diced
1 large red onion, sliced
Garlic infused extra virgin olive oil, generous drizzle
Salt and pepper, generous sprinkle
*Feel free to use whatever veggies you like
30g pine nuts
Sticky Balsamic Original (or your favourite variety)
1) Pre heat oven to 180C.
2) Combine Roasted Vegetable ingredients, spread on baking tray and bake for 30 minutes.
3) Just before veggies are done pop chickpeas and pine nuts on a baking tray to toast slightly.
4) Pile roasted vegetables onto a serving plate and mix in baby spinach leaves. Sprinkle with chickpeas, drizzle with Sticky Balsamic Original and scatter over roasted pine nuts.
